These bars are an addictive combination of flavors and textures--consider yourself warned!
Ingredients
1 c. All-Purpose Flour
½ tsp. Baking Soda
¼ tsp. Salt
½ c. (1 stick) Butter, browned (*see notes)
1 c. Dark Brown Sugar
1 Egg
1 tsp. Vanilla
⅔ c. shelled Salted Pistachios, divided
⅔ c. sliced Dried Apricots, divided
Instructions
Preheat oven to 350°. Line an 8 in. x 8 in. baking dish with parchment or grease with butter and dust with flour.
In a smallish bowl, whisk together the flour baking soda, and salt.
In a medium bowl, whisk together the browned butter and sugar. Whisk in the egg and vanilla. Add the flour mixture to the butter and sugar mixture and mix with a spatula until just combined. Fold in half of the pistachios and half of the apricots.
Spread the batter in the prepared pan. Scatter the remaining pistachios and apricots over the top and gently press with your palms. Bake until a tester comes out clean, 20-25 minutes. Allow to cool on a wire rack for at least 15 minutes before cutting and serving.
Notes
How to brown butter:
Cut a stick of butter into 8 or 10 pieces. Place the butter pieces in a small, light-colored (so you'll be able to see the color of the butter) pan and melt over medium heat. Once the butter has melted and the foaming has subsided, continue to cook over medium heat until it is light brown and smells nutty. Watch it carefully as it can go from brown to burnt pretty quickly!
